Ingredient quantities and results? Looking for baking help?

Without me wasting 20 pounds in baking supplies, does anyone know what more or less of certain ingredient do in baking muffins/cookies? I know brown sugar over white sugar makes cookies softer. What would more/less milk,water, baking soda or powder, flour do? Thanks in advance for any answers :)
